Chocolate puffs

Chocolate and sugar puffs, the perfect combination for a special kids treat. This is such an easy recipe that the kids will love making it, although they will need supervision for melting the ingredients.

makes 8-10

50 g butter
3 tbsp honey
3 tbsp cocoa powder, unsweetened
50 g 72% cocoa chocolate (dark), broken into small pieces or grated
50 g puffed rice

1. Place individual cake or muffin cases into muffin tray.
2. Put butter, honey and cocoa powder into a large saucepan and melt over a low heat, stirring continuously. When all the ingredients have thoroughly melted and been mixed together remove from heat.
3. Add the chocolate pieces and mix together until they have melted. It doesn't matter if some of the pieces of chocolate don't completely melt, as they make interesting little surprises when biting into.
4. Add the puffed rice and mix everything together until the cereal is completely coated in the sauce.
5. Spoon the cereal mixture into the paper cases. If there is any chocolate sauce left in the saucepan spoon it over the cereal in the paper cases.
6. Allow the puffs to cool and set before storing in an airtight tin.

For extra special birthday versions sprinkle with multi-coloured sugar strands before they have set. Another alternative is to reduce the sugar puffs to 40g and add 25g of tiny marshmallow pieces to the mixture, they'll give the puffs a chewy surprise.
