Chocolate martini #2

45 ml brandy
45 ml creme de cacao
30 ml whipping cream
20 g chocolate, semi-sweet or bitter-sweet (finely chopped)
grated nutmeg (optional)

1. Put the whipping cream and finely chopped chocolate into a small saucepan over a low heat. Simmer, stirring continuously, until the chocolate is melted and has completely blended with the cream.
2. Remove saucepan from heat and put the base into a bowl of cold water, this is to reduce the temperature of the chocolate cream mixture, stir continuously until cooled.
3. Put crushed ice into a cocktail shaker and pour the brandy and creme de cacao over the ice. Add the cooled chocolate cream. Shake well (with lid on), then strain into two chilled martini glasses.
4. Optional - dust the top of each chocolate martini with finely grated nutmeg.
